What do you do when you get a good deal on zucchini and yellow squash?? Put them together with other vege’s and enjoy a medley of flavor!
Dan’s Vegetable Medley
2 Quarts of canned whole tomatoes
16 oz frozen corn
16 oz can of Black Eyed peas (rinsed) or another bean if you prefer
1 medium onion
1 medium zucchini, chopped into 1 inch pieces with seeds removed
1 medium yellow squash, chopped into 1 inch pieces, seeds removed
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1 tsp basil
1 tbsp sugar
1 bay leaf (remove leaf before serving)
Put all ingredients in the stock pot. Bring to a boil. Turn down to simmer. Simmer about 2 to 3 hours, to thicken. Then enjoy.
We set our pot on the wood stove to simmer.
This recipe is one that gets even better when refrigerated over night, Then reheated.
