We love lemon treats so when I found this recipe for Lemon Pie, in an old booklet from an auction, with only 6 ingredients, I had to try it.
1 Crumb Crust
1 1/3 cups Sweetened Condensed Milk
1/2 cup Lemon Juice
1/4 tsp. Lemon Extract (sometimes I double it)
2 Eggs, separated
1/4 tsp. Cream of Tartar
4 Tbsp. Sugar
1. Blend sweetened condensed milk ,lemon juice, lemon extract and egg yolks.
3. Add cream of tartar to egg whites;
beat until almost stiff enough to hold a peak.
Add sugar gradually, one Tbsp at a time,
beating until stiff but not to dry.
Pile lightly on pie filling and make peaks if you want.
(That’s the fun part.)
4. Bake at 325 degrees (F.) for 15 minutes or until lightly browned.
Prep time 15 minutes
Cook time 15 minutes
This Lemon Pie is a good pie if you need a dessert in a hurry. ENJOY
