Strawberry-Rhubarb Crisp

It is Rhubarb season at our house and the strawberries are on sale(our strawberries are never ready at the same time as our rhubarb.) We already made rhubarb pie so I created this dish to help use up the rhubarb and strawberries. And it was an instant hit. A little tart and a little sweet, mmmm!

Strawberry -Rhubarb Crisp

Grease a 9 x 13 pan and heat oven to 375 degrees

3 cups Strawberries, chopped

2 1/2 rhubarb, chopped (we mixed red & green rhubarb)

1/3 cup sugar

Mix then spread Strawberries and Rhubarb in pan then coat with 1/3 cup of sugar, set aside

1 1/8tsp cinnamon

3/4 tsp nutmeg

3/4 brown sugar

1/2 cup sugar

3/4 cup flour

3/4 cup oats

1/2 cup butter

In large bowl stir oats, brown sugar, sugar, flour, cinnamon, nutmeg

With pastry blender cut in butter

Sprinkle mixture over strawberries & rhubarb

Bake 30 minutes, let cool and set for 15 minutes
